Build confidence one good technique at a time. Explore chef resources, cooking classes and our home-cooking learning path.
Your six-lesson kitchen course
1. Set up for calm cooking
Read the recipe, clear your worktop and gather tools before starting. Practice cutting one carrot into even pieces. Keep raw ingredients separate from ready-to-eat food.
Exercise: write a five-step preparation list for tonight’s meal.
2. Understand heat and browning
Brown mushrooms in uncrowded batches. Compare a crowded pan with a spacious one. Notice moisture and color, then reduce heat before adding garlic.
Exercise: record the pan size, heat setting and result.
3. Balance flavor
Make a small dressing with 1 tablespoon lemon juice and 2 tablespoons olive oil. Taste on a piece of vegetable, then adjust gradually. Choose acid, richness and seasoning deliberately.
Exercise: compare a plain bean with a dressed bean.
4. Build a complete vegetarian meal
Choose beans, lentils or tofu as a substantial center. Add vegetables and a grain or potato as desired. Finish with a contrasting texture or sauce.
Exercise: make the chickpea tray bake and note one useful substitution.
5. Plan and shop with purpose
Choose three dinners with overlapping ingredients. Check your pantry, generate your shopping list and leave one evening flexible.
Exercise: export your plan and mark ingredients you already own.
6. Host a meal without the last-minute scramble
Choose a make-ahead starter, a manageable main and a finished dessert. Work backward from serving time and write the last ten minutes of tasks.
Exercise: complete the entertaining page in the free workbook.
