Ingredients

1 can white beans, drained

0.5 cucumber

1 lemon

2 tbsp olive oil

0.25 cup chopped parsley

1 cup cherry tomatoes

2 cups baby spinach

Method

Rinse and drain a 15-ounce can of beans. Dice the cucumber and halve the tomatoes.

Whisk 2 tablespoons lemon juice with olive oil and a pinch of salt and pepper.

Toss beans, cucumber and tomatoes with the dressing. Fold in parsley.

Divide spinach between two bowls and spoon the beans over the top. Taste and adjust lemon or pepper.

Dry the beans after rinsing so the dressing clings rather than turning watery.
