Roasting concentrates tomatoes into an easy sauce with olive oil, garlic and basil.

Ingredients

180 g dry pasta

400 g cherry tomatoes

2 tbsp olive oil

2 cloves garlic

0.25 cup basil

2 tbsp vegetarian hard cheese

Method

Heat the oven to 425°F / 220°C. Toss tomatoes and peeled garlic with oil on a rimmed tray.

Roast 20–25 minutes until tomatoes collapse and begin to color.

Cook pasta according to its packet, reserving a cup of cooking water before draining.

Mash the garlic and tomatoes in a bowl. Toss with pasta, basil and cheese; loosen with a little pasta water.

Use a vegetarian-certified cheese, or omit it for a vegan version.
